Harrisburg Area Community College Relationship 

Greenwood Hospitality Group is committed to finding the best and brightest talent in the industry and to developing the workforce of the future. To further this goal, Greenwood entered into a formal relationship with the Benjamin Olewine III School for the Culinary Arts at Harrisburg Area Community College in Harrisburg, PA. Greenwood’s award-winning restaurant, “Bricco” plays host to aspiring chefs, culinarians and restaurant managers. The restaurant provides real life, a for-profit laboratory where the future hospitality leaders learn and hone their craft. 

Greenwood’s relationship with the culinary school dates to 2006 when Greenwood Principal, Bill Kohl approached the school regarding the enhancement of their culinary education program. The entire curriculum was re-structured to accommodate three practicum/laboratory style classes which are held daily at Bricco. Greenwood’s leadership provides the educational instruction and coordinates with HACC’s professors to ensure all key result areas are accomplished and final grading is completed.

Educational instruction entitled “Restaurant Operations” includes three defined classes. In Restaurant Operations 1, students learn the principles of cooking techniques, knife skills, fundamentals of ware washing and effective receiving and storage procedures. Restaurant Operations 2 includes working in the pantry and garden manager station, as well as the raw bar, pizza oven and dessert stations. They also begin exposure to dining room management where they learn table and seat numbers and proper serving techniques. Restaurant Operations 3 includes work on the hotline, creation, and pricing of features and exposure to principles of mixology and wine knowledge.

Completion of these courses is a requirement to achieve their two-year Associate of Arts degree from the college. Greenwood continues to foster this relationship as a means to further its commitment to serving the industry and the local community.
